    The Fascinating Legend of Chai

Chai literally means China and its story fittingly began in ancient China over 5,000 years ago. It is said that the Emperor Shen Nung was a skilled ruler, creative scientist, and patron of the arts. He was also a very careful man, who required that all drinking water be boiled as a hygienic precaution. One day he and the court stopped to rest in a distant province. As the servants began to boil water for the court to drink, dried leaves from a nearby bush fell into the boiling water. The water darkened, and the Emperor dared to drink it anyway. He found it both refreshing and stimulating. And so, according to legend, tea was created.

The Chinese valued this wonderful beverage so highly that it was given as a gift to visiting dignitaries by the court of the Emperor. These visitors returned home and shared it with the Russian Czar and Indian Maharajas. At that time in India the traditional hot drink was a savory mixture of milk, sugar, ginger, cardamom and other spices. A servant at the court of the Maharajas had the wonderful idea of adding delicious Chinese tea to this spiced milk. Everyone who tasted the new beverage instantly loved the result. With the addition of China tea to an Indian tradition, the world can now enjoy the wonderful brew named chai.
